Peasant cooking in the Coffee Region has remained unchanged for many, many years. Visitors can enjoy the famous chorizos from Santa Rosa, traditional corn arepas, and a good plate of beans in traditional fondas (diners) and roadside restaurants.
You cannot leave without trying Santa Rosa de Cabal chorizo sausages and Salento trout.
In some areas, especially in the Valle del Cocora, where trout is cultivated, a variety of delicious trout preparations is always available.
In the capital cities of the departments, a number of restaurants offer all kinds of cooking; and in all of them, the graciousness of the hosts is outstanding.
